Job Description

Shellfish Ireland is seeking an enthusiastic and driven Product Development Technologist with a genuine passion for seafood to join our innovative team. This is an exciting opportunity to play a key role in developing and launching the company’s next generation of value-added seafood products within a growing and forward-thinking organisation.

Key Responsibilities

  1. Lead the development of a new range of value-added seafood products, from concept through to launch.
  2. Collaborate closely with internal teams (production, quality, and sales) and external partners to research, develop, and commercialise new product lines.
  3. Engage with key customers, both existing and potential, to ensure products meet market needs and deliver strong commercial results.
  4. Support the scale-up of production in-house, ensuring smooth transition from kitchen development to full-scale manufacturing.
  5. Continuously evaluate and refine the NPD process, driving innovation and contributing to sustained revenue growth.


This role offers an excellent opportunity for a food technologist who is passionate about innovation, seafood, and delivering high-quality, market-ready products.

The successful graduate will lead this project, in a supportive partnership with Southern Regional College as part of the InterTradeIreland Innovation Boost Programme.

Interviews will be held approximately week commencing: 15/12/2025

Essential Criteria

  • 2.2 Degree Level or above in a Food Related Subject. Food Science/ Nutritional Science/ Food Innovation.
  • Minimum of 1 year industry experience in a food-related role. This could include an undergraduate placement.
  • Must be legally entitled to work in Ireland/EU and travel throughout the island of Ireland if required; if you do require a visa/work permit allowing you to work in Ireland/EU you must upload a copy of it with your application. Failure to provide a relevant Visa/Work permit will result in your application not being considered.

  • Food manufacturing experience, ideally with cooked value-added products.

  • Strong planning and organisational ability.
